Moringa Podi


Moringa Podi

This is a really oil free recipe/podi.

Now podis or powders are very typical of Andhra cooking. All you need is some podi, a good amount of ghee and hot rice. Thats it

Lunch done.

That is the power of the podi, or rather the powder.

There are many types of podis. Podi is nothing but powder.

All sort of combinations and permutations can be made.

Make it sesame seeds, call it nuvvula podi

Make it with garlic, call it vellulli karam podi.

Make it tur dal, call it Kandi podi. Make it with curry leaves, call it karvepaaku podi.

You get the drift.

You name it and we can do a podi out of it.

Mostly the combinations need to work out. You need to add a ingredient to one kind and not add to make another kind of podi.

Podis are very famous here. All you need is some aromatic oil. Peanut, sesame seed, or plain old ghee. And there comes your handy podi. For idlis, dosas, and rice.

Now how I came about this recipe. Courtesy big basket a online grocery store. I bought this moringa podi from there.

G, A and me ate it. And there was no stopping. We ate it within no time and then bought moringa leaves this time.

Microwaved all the ingredients and then there was this awesome podi.

All you need is

Drumstick leaves: About 300 gms or more.

Clean the leaves, remove the stalks and tiny stems.

Wash and let it dry till there are no traces of water.

Let it dry in the sun, if possible . Or spread them over a clean cloth.

Urad dal: about 2 tablespoons

Red chillies: 6 to 7

Jeera: 1 teaspoon

Garlic: 6 to 7 cloves

about a tiny piece of tamarind, cleaned.

Make it super healthy by adding a tablespoon of flax seeds.

Salt: appropriately

All you have to do is carefully microwave all the ingredients.

Do a sample batch of the leaves in a microwave.

They should come out green yet dry like potpourri.

Rest of the ingredients too.

If microwave is not convenient option, try dry roasting the same in a good heated pan.

Take off the microwave or stove, cool.

Put all them in a good mixer.Powder them to a really fine powder.

Salt appropriately.

And the good old dosa podi is ready. The most simple ingredients. Don’t have moringa leaves, no issues. Try the same with curry leaves. Don’t even have the curry leaves, try the same with flax seeds. Or even sesame seeds.

Tastes just the same.

Ok, all that oil you didn’t use. Now you can use. Heat oil and pour little over the hot rice.

Mix with podi and just eat. Get some Lays or chips or vadiyums or papadums. Lunch in a jiffy ready.

Store it for about a fortnight. And you always have something to eat with your rice or dosas or idlis.
